What You'll Need for this Recipe

White Rum is the classic spirit for both a mojito and a piña colada and is sometimes called light rum, or silver rum. I personally prefer dark rum and have found this recipe works well either way.
Coconut Milk for creaminess and coconut flavor. I recommend using full fat coconut milk from a can rather than the kind you'd find in a grocer's refrigerated section in a carton.
Pineapple Juice add sweetness and tropical flavor. Feel free to use fresh juice or concentrated or even pineapple nectar.
Fresh Mint is a non-negotiable here. Nothing else will hit quite the same.

Substitutions & Variations
Club Soda - If you don't have club soda available, any unflavored sparkling water or mineral water will work. Tonic can also work but it will add sweetness so adjust as necessary.
Sweetener - I add a bit of brown sugar or cane sugar to this drink to keep the flavor profile balanced. But you can use the granulated or liquid sweetener of your choice! Try my honey ginger syrup for a nice little twist!
Shaken or Frozen - If you want to make a pineapple and coconut mojito frozen, replace the pineapple juice with frozen pineapple chunks then add all the ingredients to a blender and pulse until smooth.
How to Make a Piña Colada Mojito

Step One: Muddle the mint and brown sugar together in a cocktail shaker.

Step Two: Pour all the liquids into the shaker plus ice.

If you don't have a muddler tool, use the blunt end of a kitchen spoon (preferably wooden) instead. And a shot glass can work just as well as a jigger to measure out the liquids. A standard-size shot glass typically holds the same volume as the large end of a jigger.

Step Three: Shake up the cocktail until well mixed then strain into a highball glass over ice.

Step Four: Top up the glass with club soda then stir and serve.
Frequently Asked Questions
Because this is a fizzy drink, I don't recommend making it in it advance. Over time, the bubbles from the club soda will go flat and the ice will melt.
For pitcher piña colada mojitos, muddle together one tablespoon of brown sugar or sweetener with 12 mint leaves. Fill the vessel halfway with ice then pour in eight ounces rum, eight ounces pineapple juice, four ounces coconut milk, and three ounces lime juice then top up with about 12 ounces sparkling water and stir to combine.

How to Serve
Since the muddled mint gets strained out of this drink, I like to finish it with a bouquet of mint. Add a lime wheel, too, and you're about done!
The mojito it often served in highball glasses over lots of ice. And straining out the mint leaves means you can add in a straw for easier sipping.
