Who else is still holding on to summer produce like it's the series finale of your favorite TV show? Don't fret because freezing it is the answer! I still have one bag of the bounty Northwest Cherry Growers sent over a few weeks back chilling out in my freezer. In last week's cherry post, I mentioned that you might want to freeze some cherries before the season is over and, if you listened, you're in luck because today we are whipping those bad boys out of the freezer, adding some tequila, and throwing a party! Well, maybe not a party but we're for sure drinking 2-minute frozen cherry pineapple margaritas. 🙂
Even if you haven't already frozen a few cherries, you'll want to do so in order to hold on to that summery goodness a little longer and to make these margaritas. Of course, there are many ways to use frozen cherries: in smoothies, in baked goods (no thawing required), or even on their own as an icy treat. I think this way might be the most fun, though. And it's so easy. I'm talking five ingredients and a quick whirl in the blender easy. Sound familiar? You might have heard me describe my frozen watermelon mint lemonade the same way because it's just as simple to make. It's also alcohol-free if that's more your speed. But back to these margaritas: toss frozen cherries, frozen pineapple, tequila, triple sec (or cointreau) and a bit of lime juice into your blender, pulse, and try to contain the "Yaaaaaasssss!" that will undoubtedly want to escape your mouth after just one sip. Don't worry. My friends and I did the same. It is completely normal. These are that good and easy enough to make multiple rounds.
How to Freeze Cherries to Keep Beyond the Season:
- Wash and pat dry.
- Pit.
- Spread in a single layer on a cookie sheet.
- Freeze overnight.
- Store in a zip-top bag. They keep for about a year or, if in a deep freeze, indefinitely.

2-Minute Frozen Cherry Pineapple Margaritas
Ingredients
- 2 cups frozen pineapple chunks
- 2 cups frozen cherries
- ½ cup tequila
- ¼ cup triple sec
- juice of 3 limes
- 3 tablespoons sugar or simple syrup (optional)
Instructions
- Add all ingredients to a blender and pulse until smooth. Divide between two glasses.
