Piña Colada Flavor - The pineapple coconut combination has been a favorite of mine since I had my first proper piña colada while vacationing in San Juan, Puerto Rico. And this easy drink tastes spot on!

What You'll Need for this Recipe

Frozen Pineapple and Pineapple Juice make this piña colada virgin drink naturally sweet with extra pineapple flavor and create a frosty frozen mocktail without adding a ton of ice. You can make this mocktail using pineapple juice from concentrate or fresh pressed!
Coconut Milk adds creaminess and tropical coconut taste. For the best coconut flavor and smooth texture, I recommend using full fat coconut milk from the can (or you can make your own) rather than from a carton.

Substitutions & Variations
Garnishes - This recipe includes instructions for a crunchy toasted coconut rim that I highly recommend for razzle dazzle. And a maraschino cherry provides the perfect pop of color. Feel free to add more pineapple or whatever else you like as a finishing touch.
Alcohol - If you want to transform this non-alcoholic drink into a cocktail, just add a shot of rum. Check out my piña colada mojito and piña colada margarita for more spiked fun!
Sweetener - I created this drink with natural sweetness but you can add a teaspoon or so of your favorite liquid or granulated sweetener, including zero sugar options.
I recommend brown sugar or try my honey ginger syrup or pineapple simple syrup for flavored sweeteners!
How to Make a Piña Colada Virgin at Home

Step One: Smash toasted coconut into crumbs.

Step Two: Dip your glass rim in honey then into the coconut crumbs to create the garnish.
Pro Tip: Place the glass into the refrigerator to solidify the honey in place and keep the rim from dripping down the side of the glass!

Step Three: Add mocktail ingredients to blender and pulse until smooth and uniform.

Step Four: Pour the drink into your prepared glass and finish with a cherry.
Frequently Asked Questions
Since it's frozen, I don't recommend making the piña colada mocktail in advance. The ice will melt and it will lose its slushy texture.
To make pitcher piña colada mocktails, blend together one cup of frozen pineapple chunks, 12 ounces pineapple juice, 12 ounces coconut milk, and one cup of ice until smooth. Makes four servings.

Easy Frozen Piña Colada Mocktail
Ingredients
- 2 tablespoons toasted coconut
- 1 tablespoon honey
- ¼ cup frozen pineapple chunks
- ¼ cup ice
- 3 ounces pineapple
- 3 ounces coconut milk
- 1 maraschino cherry optional garnish
Instructions
- Use a muddler or the back of a kitchen spoon to crush the toasted coconut into crumbs.
- Dip the rim of the glass into honey then into the coconut crumbs and place in the refrigerator to keep the honey from dripping down the sides of the glass.
- Add pineapple chunks, ice, pineapple juice, and coconut milk to blender and pulse until smooth and uniform (about 45 seconds to one minute).
- Pour the drink into prepared glass and garnish with maraschino cherry.
