Ginger Beer - Grab whichever ginger beer you typically enjoy drinking straight or mixing into drinks. I recommend one that's not overly sweet since we're adding sweetness with the syrup.
Hibiscus Simple Syrup gives the drink a pretty purply pink color and adds notes of hibiscus flowers, ginger, cinnamon and more. Use my homemade hibiscus syrup for the best results!
This delicious syrup is also the flavor base of great hibiscus cocktails like the hibiscus old fashioned and hibiscus martini or hibiscus vodka mule! If you like ginger beer and hibiscus together, you'll really like the mule.

Substitutions & Variations
Ice - I like to use crushed ice or pebble ice for a pretty ombre effect in the drink but you can truly use whichever kind of ice you have on hand and it will taste just as good.
Spike It - You can turn this hibiscus simple syrup mocktail into a cocktail with a shot of liquor. I recommend rum, tequila, gin, or whiskey.
Pro Tip: If you want the pebbled ice look but don't have a fancy machine, just pick up a big cup of it at Sonic--that's what I do!

Homemade Hibiscus Ginger Beer
Equipment
- 1 highball glass
- 1 spoon
Ingredients
- ice
- 1 ounce hibiscus syrup
- 5 ounces ginger beer chilled
Instructions
- Fill glass ¾ full with ice.
- Pour in hibiscus syrup followed by ginger beer.
- Stir to combine the ingredients and serve cold.
Notes

Add 1 ½ cup water, 1 ½ cup brown sugar, 1 cup dried hibiscus, 2 inches fresh ginger, 1 cinnamon stick, and 2 whole cloves to a small saucepan over medium heat.

Stir until brown sugar dissolves then bring to a boil.

Reduce heat to low and simmer for about 10 minutes then turn off heat and allow syrup to cool before straining out solid ingredients. Makes 24 servings.
