What You'll Need for this Recipe

Coconut Water - is the base full of natural sweetness, hydration, and tropical taste. Use fresh coconut water from young or "tender" coconuts for the best nutritional profile with no pulp.
Lime Juice from fresh limes is best for flavor but you can use concentrated lime juice, if needed.
Honey Ginger Syrup - I make it from scratch in 30 minutes and keep it on deck for making lots of different drinks, including my grapefruit mocktail!
Fresh Mint makes this taste kind of like a coconut mojito mocktail. Use whatever kind of mint your like.

Substitutions & Variations
Citrus - I love preparing coconut water lime mocktails but you can use orange, lemon or even grapefruit to change up the taste and color.
Bubbles - Add the bubbly water of your choice like Top Chico to make a coconut sparkling water mocktail for extra fanciness!
Sweetener - You can swap in my turmeric ginger honey or use another sweetener of your choosing like agave nectar, monk fruit or maple syrup--or none at all.
How to Make a Coconut Mocktail

Step: Muddle the mint and honey ginger syrup to release the oils and flavor.

Step: Add ice, lime juice, and coconut water.
Pro Tip #1: If you don't have a muddler, the end of a kitchen spoon works nearly just as well!
Pro Tip #2: I use a jigger to measure out the liquid ingredients but if you don't have one, grab a standard shot glass, which holds the same volume as the large end of a jigger.

Step: Stir to combine all the ingredients for a consistent sip from start to finish.

Step: Serve on the rocks and garnish with a wedge of lime (optional).
Pro Tip #3: Use a bar spoon or a butter knife and a gentle hand to stir the drink.

You can make this drink up to three days ahead of time. Store in the refrigerator until ready to serve.
Add about 24 mint leaves and two ounces honey syrup to a pitcher then muddle to combine. Pour in 24 ounces of cold coconut water and the juice of two limes. Serves up to four people over ice.

Coconut Water Mocktail (Quick & Easy!)
Ingredients
- 6 mint leaves
- ½ ounce ginger honey syrup
- ice
- ½ lime
- 6 ounces coconut water chilled
Instructions
- Add mint leaves and honey syrup to a rocks glass and muddle to release the oils from the mint.6 mint leaves, ½ ounce ginger honey syrup
- Fill glass halfway with ice then squeeze in lime juice and top up with coconut water.ice, ½ lime, 6 ounces coconut water
- Stir mocktail to combine all the flavors. Serve cold.

Peel four inches fresh ginger root and slice into small pieces no more than ¼ inch thick.

Add ginger to saucepan with water and honey over medium-high heat and stir until honey is dissolved.

Bring mixture to a boil then remove from heat. Steep honey ginger syrup for at least 30 minutes, to allow flavor to infuse. Makes about 16 ounces.
