❤️ Why You'll Love this Recipe
Quick and Easy - You only need five minutes to make this lychee non-alcoholic drink and just four simple ingredients. No mixology expertise is needed so this is beginner friendly!
Balanced Flavor - This mocktail with lychee has bright, tart, and sweet notes with no added sugar. It's super fresh and juicy and bubbles never hurt a situation, right?
Tried, Tested, Approved - I must admit that the first iteration of my lychee based mocktail was not great. The lychee flavor was barely there and, honestly, I wouldn't make it over and over. But I tried to force it and convice myself it was pretty good anyway. Thankfully, God blocked that nonsense and got my attention by leading me to knock over the glass not one but twice during the photography phase.
I remember thinking to myself, as I cleaned up the mess, that this wasn't my best work anyways so I might as well start over. So I tinkered with the measurements a couple more times and the result is just perfect! Undeniably lychee-esque with light and refreshing flavor. As Aaliyah said, if at first you don't succeed...
Here are more thoroughly tested zero-proof drink options for you to try next: tangy grapefruit mocktail, muddled watermelon mocktail for summer, frozen piña colada mocktail, hydrating coconut water mocktail, and turmeric ginger mocktail!
What You'll Need for this Recipe

Lychees and Syrup add the delicate, tropical flavor of lychee fruit with a touch of sweetness. The lychees are also a nice textural treat to chew on once you're done sipping.
Pineapple Juice adds the right tangy note to highlight the lychee flavor. We're really just adding a splash here so don't worry about which kind you can find.
Sparkling Water lightens up the entire drink and makes it effervescent. Use whichever unflavored brand you like, such as Topo Chico, San Pellegrino, Perrier or even a store brand.

Substitutions & Variations
Citrus - You can use lime, orange, grapefruit, or lemon interchangeably in this recipe. Lime and lemon will give you the most sour flavor while grapefruit and orange will be a bit sweeter.
Sweetener - You can omit the lychee syrup if you want to limit the amount of sugar or use pureed lychee instead. Or if you want to substitute it with another kind of sweetneer, such as coconut sugar, agave nectar or a zero sugar option. In that case, I recommend muddling the lychee fruit with the sweetener before adding to the drink to help meld the flavors and release some juice from the lychees.
Spike It - Add your favorite spirit or spirit-free alternative to make it a cocktail.

How to Make a Refreshing Lychee Mocktail

- Step 1: Add the pineapple juice, lime juice, and lychee syrup to a glass over ice and stir.

- Step 2: Add lychee fruit and top up with sparkling water.
Pro Tip #1
For extra razzle dazzle, you can freeze the lychees ahead of time. This way, they'll help keep your drink cold!
Frequently Asked Questions
I don't recommend making this drink ahead of time because the bubbles in the sparkling water will go flat. And it's so quick to make on the spot you won't save much time by prepping it in advance.
Combine 12 ounces lychee syrup, juice of two limes, two ounces of pineapple juice, and eight ounces of sparkling water over ice in a pitcher. Serve with lychee fruit and fresh ice. Serves four.
