Use a knife and cutting board to cut the lime in half. Cut a slice from one of the halves and set aside to use as a garnish.

Fill a highball glass halfway with ice, then pour in the lychee syrup and pineapple juice and squeeze in the juice from half of the lime.
ice, 3 ounces lychee syrup, ½ ounce pineapple juice
Drop in lychees then top up glass with sparkling water.

PreparationI don't recommend making this drink ahead of time because the bubbles in the sparkling water will go flat. And it's so quick to make on the spot you won't save much time by prepping it in advance.To batch this drink for a crowd, combine 12 ounces lychee syrup, juice of two limes, two ounces of pineapple juice, and eight ounces of sparkling water over ice in a pitcher. Serve with lychee fruit and fresh ice. Serves four.
