Add mint leaves and honey syrup to a rocks glass and muddle to release the oils from the mint.

Fill glass halfway with ice then squeeze in lime juice and top up with coconut water.

To Make the Ginger Honey Syrup
Peel four inches fresh ginger root and slice into small pieces no more than ¼ inch thick.
Add ginger to saucepan with water and honey over medium-high heat and stir until honey is dissolved.
Bring mixture to a boil then remove from heat. Steep honey ginger syrup for at least 30 minutes, to allow flavor to infuse. Makes about 16 ounces.
PreparationYou can make this drink up to three days ahead of time. Store in the refrigerator until ready to serve.To large batch this drink, add about 24 mint leaves and two ounces honey syrup to a pitcher then muddle to combine. Pour in 24 ounces of cold coconut water and the juice of two limes. Serves up to four people over ice.ModificationsI love making coconut water lime mocktails but you can use orange, lemon or even grapefruit to change up the taste and color.
