Sweetener - I use honey in this recipe for the subtle floral and herbal notes it adds along with sweetness but if you want to make it vegan, you could instead use any other sweetener such as maple syrup, coconut sugar, brown sugar or your favorite zero sugar option like stevia.
Citrus - If you don't have lime, try lemon or sour orange juice instead. Fresh is best but concentrated bottled citrus juices work, too! For more zesty flavor, squeeze the juice into the tea.

How to Make Coconut Iced Tea at Home

Step One: Bring water, ginger, and honey to a boil.

Step Two: Add green tea and steep then remove and add the coconut water.
Pro Tip #1: If you use raw honey, like I do, you'll probably notice foam form on top of your boiling liquid. This is the result of enzymes and sugar breaking down as well as previously trapped air escaping. Just skim off any foam and you're good to go!
Pro Tip #2: Do not squeeze or press the tea bags while removing them! Doing so releases extra tannins into the liquid, which makes the tea taste bitter and look cloudy.

Step Three: Pour into a pitcher then chill.

Step Four: Enjoy ice cold by the glass!
Pro Tip #3: If you like, freeze coconut water in ice cube trays and use in place of regular ice for extra flavor.

Refreshing Coconut Iced Tea
Equipment
- 1 knife
- 1 slotted spoon or mesh strainer
Ingredients
- ½ inch fresh ginger or ¾ teaspoon ground ginger
- 4 cups water
- 1 cup honey or sweetener of choice
- 10 green tea bags
- 4 cups coconut water
- ice
- fresh mint for garnish
- limes for garnish
Instructions
- Slice ginger into thin coins then add to small saucepan with honey and water over medium high heat.
- Stir until honey and water are combined and bring to a boil. If using raw honey, skim off any foam that forms on the surface of the liquid.
- Remove from heat then add green tea bags and steep for three minutes.
- Remove tea bags (don't wring out the bags, just lift them out) and ginger pieces then add coconut water and allow the liquid to cool for about 10 minutes.
- Pour the tea into a pitcher then transfer to fridge to chill for at least two hours.
- Serve tea over ice with lime slices and mint leaves to garnish.

Way too sweet and I would recommend cutting the coconut water down by half. Unfortunately this recipe was very salty from the coconut water - not as refreshing of ice tea as I would've liked.
