Shrubs are vintage beverages typically made with vinegar, fruit, herbs, and sugar. The American shrub cocktail has roots in England where it was served with different kinds of alcohol.
This centuries-old sip is also known as drinking vinegar and believed to have medicinal qualities.

What You'll Need for this Recipe

Grapefruit Juice provides tart fruity flavor--and you can use white, ruby red or pink grapefruit interchangeably. I highly recommend fresh grapefruit juice but bottled can work in a pinch.
Honey Ginger Syrup adds sweetness and the benefits of ginger and honey and since it's a syrup and not regular honey, it mixes easily into this cold drink.
Sparkling Water of any kind will work, including Topo chico or club soda.

Substitutions & Variations
Sweetener - Switch up the sweetener in your grapefruit honey mocktail with my turmeric ginger honey, maple syrup, coconut sugar, or even date honey to make it vegan!
Citrus - I make this mocktail with grapefruit juice but you can try other citrus fruits like blood orange, Meyer lemon or whatever you want.
Sea Salt - For proper mock-tail vibes and an optional boost of electrolytes, add a salt rim to your glass.

How to Make a Grapefruit Shrub Mocktail

Step One: Run a piece of grapefruit along the side of the glass then dip in sea salt to create a garnish.

Step Two: Muddle the mint and honey syrup.
Pro Tip #1: If you don't have a muddler to press the mint with, grab a (preferably wooden) kitchen spoon and use the end of the handle!

Step Three: Add ice then pour in apple cider vinegar, grapefruit juice, and sparkling water.

Step Four: Stir the drink to combine for a consistent sip from start to finish!
Pro Tip #2: Use a gentle hand when stirring the drink to avoid damaging the glass, splashing the liquid out, and/or knocking the salt garnish off.

Step Five: As a finishing touch, you can add half a grapefruit slice.

Frequently Asked Questions
Although shrub concentrates are typically steeped for a while before serving, because of the sparkling water in this drink, I do not recommend preparing ahead of time.
To large batch, muddle 24 mint leaves with 3 ounces honey syrup in a pitcher or carafe. Add in ice then 2 ounces apple cider vinegar with the mother, 2 cups grapefruit juice, and about 12 ounces of sparkling water. Stir to combine. Serves four.

Healthy Grapefruit Mocktail (Shrub)
Equipment
Ingredients
- ¾ ounce ginger honey syrup
- 6-8 mint leaves
- ice
- ½ cup grapefruit juice from about one grapefruit
- ½ ounce apple cider vinegar
- ¼ teaspoon sea salt optional garnish
- ½ slice grapefruit
Instructions
- To garnish glass, run a wedge of grapefruit along side of rocks glass. Sprinkle sea salt over top.
- Add ginger honey syrup and mint leaves to glass and muddle to release the oils from the mint.
- Fill glass halfway with ice then pour in grapefruit juice and apple cider vinegar.
- Stir to combine the drink and garnish with half a slice of grapefruit, if desired.

Peel four inches fresh ginger root and slice into small pieces no more than ¼ inch thick.

Add ginger to saucepan with water and honey over medium-high heat and stir until honey is dissolved.

Bring mixture to a boil then remove from heat. Steep honey ginger syrup for at least 30 minutes, to allow flavor to infuse. Makes about 16 ounces.
