What You'll Need for this Recipe

Club Soda has a crisp, bubbly mouthfeel that we associate with classic soda drinks, so I recommend using it over mineral water or plain sparkling water.
Strawberry Simple Syrup gives this drink its red color and fruity, slightly creamy taste. I use vanilla in this strawberry soda syrup recipe to create strawberry and cream soda vibes. If you like Big Red, you'll love this.

Substitutions & Variations
Fresh or Frozen Strawberries work interchangeably here, so use whichever you have available.
Vanilla can come from a whole vanilla bean, vanilla bean paste, or even vanilla extract. In my recipe tests, vanilla extract provides a slightly weaker vanilla flavor, so keep that in mind.
Sweetener can be whatever you have available and like to use, including granulated sugar, brown sugar, honey, and zero-sugar products like Stevia. I recommend reducing the amount of sweetener by at least half if you use a zero-sugar option, taste testing, and adjusting as needed.
How to Make Strawberry Soda Homemade

- Step 1: Combine the strawberries, vanilla, sugar, and still water in a saucepan. Bring to a boil, simmer, cool, then strain.

- Step 2: Stir the strawberry vanilla syrup into the club soda.
Pro Tip #1
Don't toss out those strawberries! They're basically a strawberry compote you can swirl into oatmeal or yogurt or put on top of pancakes, waffles, or ice cream.

- Step 3: Pour over ice to serve.

- Store any extra soda in airtight glass bottles to maintain carbonation.
