First off, what are sheet pan pancakes?
Sheet pancakes are really one giant pancake that you bake then cut into pieces. In less than five minutes of prep, you mix up your pancake batter in a bowl then pour it into a half sheet pan.
For these, sprinkle a handful of blueberries over top just before baking. After that, into the oven they go for just 10 minutes at high heat. Remove from the oven and let them cool slightly before cutting et voila!
You now have a fluffy stack of pancakes filled with fruit and protein that's perfect for busy mornings when you might have otherwise thought a classic, comforting breakfast wasn't an option. Plus these are no-flip pancakes!
I'm late to the party with these, but had to comment that these have completely changed how I make pancakes for my kids! They never really cared about fancy shapes, so I just made silver dollar pancakes before, but always had that "first pancake" that wasn't as good. Now, I make sheet pancakes with chocolate chips or berries and they are all fluffy, yummy, and made in less than 20 minutes (with 15 minutes for me to make myself coffee!).

Tips for Making Sheet Pan Protein Pancakes
- What pan should I use for baked sheet pan pancakes? Be sure to use a non-stick pan. My half sheet pan has seen better days (but I can't let it go yet!) so I sprayed it down with avocado oil then lined it with a sheet of parchment paper cut to size.
- How long to bake protein pancakes? Don't do too much while baking pancakes. You'll want to be able to check on them. Especially with this particular Kodiak Cakes mix, as it will be done before the top browns.
- How to know when baked pancakes are done? Your sheet pan protein pancakes are done when the top is slightly golden and springy to the touch. You can insert a toothpick into the center to check for doneness, as well. It should come out clean.
- Can I put protein in my pancake mix? You can add protein to pancake batter with a serving of your favorite protein powder. Just know that the color and/or texture may change slightly.
- How to freeze sheet pancakes? To freeze sheet pan pancakes, allow them to cool and cut into serving size portions. Layer the pancakes in between sheets of wax or parchment paper and store in an airtight container or zipper seal bag. Frozen pancakes will keep this way for about 2 months.

Who knew that sheet pan pancakes could actually be life-changing! These days when preparing pancakes for one, I break out the cast iron pan only on Sundays. With your recipe, I can whip up a batch and grab some out of the freezer whenever I want. Pancakes for breakfast on a Tuesday, brunch on the weekend, and dare I say, for dinner! After yet another long day of quarantining, I dine on chocolate cherry pancakes for dinner in the age of the pandemic. Imagine that. Thank you😊
