- What pan should I use for baked sheet pan pancakes? Be sure to use a non-stick pan. My half sheet pan has seen better days (but I can't let it go yet!) so I sprayed it down with avocado oil then lined it with a sheet of parchment paper cut to size.
- How long to bake protein pancakes? Don't do too much while baking pancakes. You'll want to be able to check on them. Especially with this particular Kodiak Cakes mix, as it will be done before the top browns.
- How to know when baked pancakes are done? Your sheet pan protein pancakes are done when the top is slightly golden and springy to the touch. You can insert a toothpick into the center to check for doneness, as well. It should come out clean.
- Can I put protein in my pancake mix? You can add protein to pancake batter with a serving of your favorite protein powder. Just know that the color and/or texture may change slightly.
- How to freeze sheet pancakes? To freeze sheet pan pancakes, allow them to cool and cut into serving size portions. Layer the pancakes in between sheets of wax or parchment paper and store in an airtight container or zipper seal bag. Frozen pancakes will keep this way for about 2 months.

Kodiak Cakes Sheet Pan Protein Pancakes
Ingredients
- 2 cups Kodiak Cakes Almond Poppy Seed Flapjack & Waffle Mix
- 2 cups almond milk or milk of your choice
- 2 eggs
- ΒΎ cup fresh blueberries
Instructions
- Preheat oven to 425 degrees. Combine Kodiak Cakes mix, milk, and eggs in a bowl and mix until smooth.
- Spray a half baking sheet pan with non-stick spray then line with parchment paper (optional).
- Pour batter into sheet pan, spreading with a rubber spatula, if necessary. Drop blueberries into batter.
- Bake for 10-12 minutes or until golden brown and springy to the touch. If unsure, insert a toothpick into the center. It should come out clean. Cut into 12 squares while warm. Allow to cool for about 15 minutes before removing from sheet pan.

I'm late to the party with these, but had to comment that these have completely changed how I make pancakes for my kids! They never really cared about fancy shapes, so I just made silver dollar pancakes before, but always had that "first pancake" that wasn't as good. I made these and put half in individual bowls to take to work for a fast breakfast and froze the other half.
