What You'll Need for this Recipe

Greek Yogurt adds a boost of protein and helps keep the pancakes moist with fluffy texture and slightly tangy flavor. I recommend unflavored yogurt for this pancake muffin bake recipe.
Flax Meal is a great source of fiber and omega-3 fatty acids! And it doesn't change the taste or texture much, so I love mixing it into baked goods and pancakes.
Baking Soda & Powder will give these muffins a good rise so they have that signature bakery-style crinkly muffin top.
Eggs help give the muffins structure and a golden color. You can make this recipe eggless, though, if you prefer.

Substitutions & Variations
Protein Powder - You can boost the protein profile of each muffin by adding your favorite protein powder or collagen peptide powder to the batter. Just note that this tends to make them less fluffy.
Sweetener - Bake these unsweetened or with maple syrup inside the batter if you want a truly handheld breakfast.
Mix-Ins - I love fresh berries in this recipe, though you can use frozen ones, too. Just thaw and drain them well to avoid adding excess moisture to the batter. You can also do nuts, seeds, chocolate chips--whatever you like! Savory combinations like herbs and fully cooked sausage or bacon with cheddar work, too.
Size - This protein pancake batter muffin recipe makes 10 standard (cupcake-sized) muffins or five jumbo muffins. You can also make 20 mini protein pancake muffin bites or an 8x8-inch tray bake.
Vegan - Use plant-based milk, egg, and dairy-free yogurt options, as well as a vegan protein powder to make vegan pancake muffins.
How to Make Pancakes as Muffins

- Step 1: Combine all the ingredients in a large mixing bowl and stir into a uniform batter.

- Step 2: Divide the batter evenly between 10 wells of cupcake pan, then add in fresh berries.
Pro Tip #1
Gently tap the berries into the surface of the batter, but don't push them all the way down. As the muffins rise in the oven, they'll disperse themselves throughout.

- Step 3: Bake until golden brown!
Frequently Asked Questions

How to Serve
Topping Ideas: Enjoy your protein morning muffins warm with a drizzle of maple syrup, honey, jam, or fruit compote. I like to spread nut butter on top and add a sprinkle of pumpkin seeds or sunflower seeds, or chopped nuts for even more protein (and fiber)!
Pairings: Complete your plate with fresh fruit and sausage or eggs. These oven baked muffins make for a great breakfast, for sure, but can also be a convenient pre- or post-workout snack!
