"It was 95 degrees last week and we made this nice cream to enjoy on the deck to cool down! I even made it again and brought to the poolside and it was SO good each time and so incredibly easy to make! Thanks for this awesome recipe!"

What You'll Need for this Recipe
Frozen Pineapple provides the frosty soft-serve texture right off the bat, so you don't have to freeze this treat if you're in a hurry. Use pre-frozen pineapple chunks from the store or cut and freeze your own.
Full-fat Coconut Milk will produce the creamiest, richest-tasting ice cream. Make sure to grab full-fat coconut milk from the can and not the thinner, more watered-down version that is sold in cartons.

Substitutions & Variations
Milk - I must stress that you'll get the best results using full-fat coconut milk, and, of course, the flavor. But I've also tried this recipe with almond milk, and it comes close.
Flavors - Feel free to mix and swirl other fruity flavors into the mix like passion fruit, banana, mango, or papaya.
Sweetener - If you want to amp up the sweetness, add a tablespoon of agave nectar, honey, maple syrup, or a liquid zero-sugar option like stevia or monk fruit.
How to Make Homemade Piña Colada Ice Cream
- Step 1: Add all ingredients to a food processor.
- Step 2: Pulse until smooth, pausing to scrape down the sides, as needed.
Pro Tip #1
You can stop at step two and enjoy a soft-serve Dole whip-style treat. I've tried the real thing at the Dole Plantation while visiting Oahu, Hawaii, and this version is so good without any guilt! This will be more like soft serve or a milkshake than traditional ice cream and can even be slurped up with a straw.
- Step 3: Transfer to a freezer-safe container and freeze until solid.
Pro Tip #2
Freeze the ice cream for just an hour or two to get a firmer, frosty pineapple whip or for up to six hours to get it scoopable. Just let it thaw for a few minutes on the counter before scooping.

Frequently Asked Questions
Store in an airtight, freezer-safe container in the freezer, and it will keep for up to three months. Just note that the texture tends to get icier after a couple of weeks.
How to Serve
Simple and Sweet: You can enjoy this treat soft-serve style or in traditional scoops. Either way, it tastes like a virgin frozen piña colada! Add some coconut flakes for extra razzle dazzle.
Cocktail Vibes: Or spike it with a shot of rum and enjoy a mental vacation to Las Vegas in your own backyard. This is my favorite thing to order at the Chelsea Pool scene out there!
Sundae: Add whipped cream and homemade strawberry syrup for ice cream sundae vibes or serve with grilled pineapple to keep things light.
