I'm not even gone hold you, these roasted green beans with garlic brown butter are my absolute favorite way to eat green beans! They are the perfect balance of crisp and tender, dripping with nutty brown butter, and super simple to make.
I really didn't think it was possible to outdo my garlicky sauteed green beans and mushrooms (which are also amazing, by the way) but this easy side dish has quickly taken the top spot in my household!

What You'll Need for this Recipe

Fresh Green Beans will provide the best results in this recipe because we want them roasted to perfection, aka, tender with a bit of bite or crispness to them. Using canned green beans or frozen green beans will result in an overly soft texture.
Butter for making the brown butter, of course! Use unsalted butter for browning. Salted butter can brown just fine, however, the salt tends to concentrate in clusters and throw off the flavor of the final dish and we don't want that.
Fresh Garlic cooks quickly in the brown butter to infuse it with flavor. We're also using garlic powder during the roasting stage, so don't substitute with that! You can use pre-prepped garlic but I don't recommend using the jarred minced garlic because it adds liquid that we don't need here.

Substitutions & Variations
Spices - I roast the green beans garlic powder, onion, powder, sea salt, and black pepper then finish with crushed red pepper or red pepper flakes. Feel free to switch things up and add your own flair. Cayenne pepper can work in place of the red pepper, for example.
Oil - Use a neutral oil with a smoke point of at least 400 degrees farenheit for roasting the green beans. I like olive oil here but you could also try avocado oil or grape seed oil.
How to Roasted Green Beans with Fresh Garlic

Step One: Wash and dry the green beans then cut or snip off the ends.

Step Two: Toss the beans in oil and spices.
Pro Tip #1: Using kitchen shears makes quick work of removing green bean ends or you can use a good ol' fashioned knife and cutting board or pick the ends off by hand, which is what I grew up doing in my grandma's kitchen.

Step Three: Spread the green beans out onto a sheet pan and roast until cooked through.

Step Four: While the green beans bake, brown the butter, adding the garlic in the last couple of minutes.
Pro Tip #2: These green beans are ready when they have a glossy and wrinkly appearance. Their color will be a bit muted and they will have some brown sear marks from where they were in contact with the pan.
Pro Tip #3: Use a light colored skillet or saucepan so you can more easily see when the butter has browned! It will emit a nutty, toasted smell and turn golden brown when ready.

Step Five: Pour the garlic browned butter over top of green beans and toss them until well coated.

Step Six: Serve warm and garnished with crushed red pepper for a little heat.

Oven Roasted Green Beans with Garlic Brown Butter
Equipment
- 1 knife
- 1 large bowl
- 1 small skillet or saucepan
Ingredients
- 2 pounds fresh green beans
- 6 cloves garlic
- 2 tablespoons olive oil
- sea salt to taste
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ⅓ cup butter cut into chunks
- crushed red pepper to taste
Instructions
- Preheat oven to 400 degrees farenheit. Trim ends of green beans then rinse them and pat dry. Crush or mince the garlic and set aside.
- Place the prepped green beans in a large bowl then toss them with olive oil, sea salt, black pepper, garlic powder, and onion powder until evenly coated
- Spread green beans into a single layer on sheet pan and place in the oven to roast for 20-25 minutes or until green beans are cooked through. When cooked they should have a glossy, wrinkly appearance with a slightly duller green color, and brown spots where they have contact with the pan.
- While the green beans roast, melt the butter in small skillet or saucepan over medium heat. Cook the butter for four minutes then add minced garlic. Continue cooking until butter is golden brown with a toasted, nutty aroma (about 4-5 more minutes).
- Toss roasted green beans in browned garlic butter then sprinkle with crushed red pepper, and serve.
