Happy 2019! What kind of new year's goals have y'all set for this year? If any of them involve healthy eating, I've got you covered, girl. I've been working on lots of content including healthy recipes, meal planning tips, and tricks to how to stick to your goals on the go--just to name a few--and can't wait to share them with you in the coming weeks. For now, let's start with an easy, grab-and-go breakfast: cranberry almond oatmeal muffins.
First off, don't they look scrumptious?? These cranberry almond oatmeal muffins have helped me stay on track in the mornings over the past few weeks. Keeping the motivation to meal prep and make mindful eating choices throughout the week can be difficult. I have a beach vacay coming up in a few weeks and thinking about the bikinis I've ordered is usually enough but when I still come up with excuses, I lean on quick and easy recipes like this one. I shared the making of these in my Instagram story the other day and mentioned a few easy modifications to make them compliant with the Daniel Fast, Whole30, etc. The same changes work for these oatmeal muffins and my pumpkin maple baked oatmeal, too, by the way. Let's get into them!
How to Make Cranberry Almond Oatmeal Muffins...
Daniel Fast Compliant
- substitute butter with coconut oil
- omit maple syrup or substitute with date honey
- be sure to use unsweetened dried cranberries
Vegan
- substitute butter with coconut oil
Whole30 Compliant
- substitute butter with ghee or coconut oil
- substitute vanilla extract with vanilla bean powder
- substitute oats with a grain-free hot cereal mix
- be sure to use unsweetened dried cranberries

Cranberry Almond Oatmeal Muffins
Ingredients
- 4 cups rolled oats
- ½ cup sliced almonds
- ½ cup dried cranberries
- ½ teaspoon sea salt
- 1 ⅔ cup milk I use Silk unsweetened almond & coconut
- 4 tablespoons melted butter or coconut oil
- ¼ cup maple syrup
- ½ cup unsweetened applesauce
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350 degrees. Mix dry ingredients together in a large bowl and stir until will mixed. Set aside.
- In a smaller bowl, mix together applesauce, maple syrup, melted butter, milk, and vanilla extract until smooth and uniform.
- Add wet mixture to dry mixture and stir until there are no dry "pockets" left.
- Scoop about ½ cup of oatmeal mixture into each cavity of a non-stick (or greased) 12-count muffin pan. Lightly press mixture into each cavity so that the top of each muffin is smooth.
- Bake for about 25 minutes or until tops of muffins are firm when pressed. Allow muffins to cool completely in pan before removing. Store refrigerated in an airtight container.

I made these cranberry-almond muffins for the kiddos to grab-and-go on their way to classes. They love them because they say the muffins fill them up until lunchtime. I love them because I don't have to stop work to eat a healthy, nutritious breakfast.

I didn't think maple syrup was part of the Daniels fast. what can be used in place of the maple syrup?

Hi, Amber! You can use date honey in place of maple syrup or omit sweetener altogether.

Can you please rewrite the instructions I think something is wrong. I don't know where the pumpkin puree came from or how much to use.
