Combining oil and vinegar is the basic vinaigrette recipe. You can a salad dressing with different acids including citrus juices so not every dressing will have vinegar. This means that while every vinaigrette is a salad dressing, not every salad dressing is a vinaigrette.

Fresh Blood Orange Juice - This is the perfect salad dressing recipe to make during blood orange season (roughly December to March) and fresh blood oranges give the best flavor and color.

Substitutions & Variations
Oil - I make my blood orange vinaigrette with olive oil but you can use the oil of your choosing, including grape seed oil and avocado oil.
Vinegar - Blood orange dressing with apple cider vinegar is chef's kiss. You can also make it with other varieties like champagne vinegar or white vinegar. You can even make blood orange salad dressing with no vinegar--it wouldn't be a vinaigrette, though.
Sweetener - Add maple syrup or another sweetener of your choice to balance the flavor here. Honey ginger syrup is a great substitute!

You can make the dressing days ahead of time. Be sure to shake it well before serving as separation will occur.
Store in an airtight container in the refrigerator and it will keep for up to two weeks. Allow to come to room temperature before using so that it can be mixed.
You can freeze vinaigrette but it is not recommended as it is likely to separate before freezing and the flavors tend to be muted once thawed. If you need to freeze this blood orange dressing, I recommend first dividing it up into ice cube molds so that it will freeze more quickly (making it less likely to separate) and can be thawed quickly and easily in individual servings.

Ingredients
- ½ cup blood orange juice about 2 to 3 fresh blood oranges
- ½ cup olive oil
- 3 tablespoons maple syrup
