Heat milk until steaming then remove from heat and carefully mix in sweet potato syrup using frothing wand or whisk to create foam.
Pour the steamed milk mixture over the espresso then sprinkle with cinnamon and enjoy carefully.
To Make an Iced Sweet Potato Latte
Brew espresso and set aside.
Using frothing wand or whisk, mix milk and sweet potato syrup together then pour into glass filled ¾ full with ice.
Pour espresso into glass and stir. Garnish with a sprinkle of cinnamon and enjoy.

Making the Sweet Potato Syrup
Add 1 ½ cup brown sugar, 1 ½ cup water, ¾ cup sweet potato puree, 1 teaspoon cinnamon, ½ teaspoon nutmeg, ½ teaspoon ground ginger, ½ teaspoon vanilla extract, and a pinch of sea salt in a saucepan over medium low heat.
Stir until all ingredients are dissolved.
Bring to a boil then remove from heat and allow to cool. Makes 14 servings.
PreparationInstead of making the sweet potato syrup, you can mix in three teaspoons of sweet potato puree, pinches of cinnamon, nutmeg, ginger, sea salt, and a dash of vanilla extract with sweetener to taste. Feel free to use brown sugar or granulated sugar or the zero sugar sweetener of your choice or leave it unsweetened.This latte recipe is quick enough that you only need a few minutes to make it fresh but if you want to prep this latte in advance, store it in the fridge for up to three days. Reheat or add ice just before serving.VariationsTo make an iced sweet potato shaken espresso, add all the ingredients to a shaker or mason jar with ice then seal it and shake vigorously until combined.
