  • Cut strawberry in half then cut on the hull from each half in a v shape to create two heart shaped strawberry pieces. Thread each piece through a cocktail pick (optional) then set aside.
  • Fill two highball glasses ¾ full with crushed or pebble ice.
  • Divide strawberry vanilla syrup, lemon juice, rose water, and sparkling water evenly between each glass.
  • Gently stir to combine each mocktail then garnish by floating the strawberry hearts on top. Serve cold.

Making the Strawberry Vanilla Syrup
  1. Hull and slice eight ounces of strawberries and split open one vanilla bean to expose its seeds.
  2. Add strawberries and vanilla bean to a small saucepan with one cup of water and one cup of sugar (or other sweetener) over medium heat.
  3. Stir to dissolve the sugar and bring the mixture to a boil then reduce heat to low and simmer for 10 minutes.
  4. Remove from heat and strain out solid ingredients then allow syrup to cool fully before using. Makes 10 servings.
Preparation
Because this is a carbonated drink, I don't recommend making more than 30 minutes in advance or else the bubbles will fall flat.
I highly recommend crushed ice or pebble ice for the prettiest presentation with this drink. My secret sauce since I don't have a fancy ice maker is that I grab a big cup from Sonic!
Modifications
You can certainly add a shot of your favorite spirit just note that it would no longer be a mocktail but a cocktail. My favorite liquor options for this drink are gin and vodka.
You can easily double the recipe to make Valentine's Day themed mocktails for a crowd, combine six ounces of the strawberry vanilla syrup, juice of one lemon, and four drops of rose water in a pitcher over ice then pour in 24 ounces of sparkling water. Serves four.
