  • Cut lime in half and rub the juicy side of one piece along the side of a rocks glass. Sprinkle Mexican seasoning over same side of glass to create a garnish.
  • Fill glass halfway with ice then add in mezcal, orange liqueur, hibiscus syrup, and ¾ ounce of juice from the lime (about ¾ of the lime to yield this much juice).
  • Stir the cocktail until glass is chilled to touch (about eight seconds). Enjoy responsibly!

Notes

Making the Hibiscus Simple Syrup
  1. Add 1 ½ cup water, 1 ½ cup brown sugar, 1 cup dried hibiscus, 2 inches fresh ginger, 1 cinnamon stick, and 2 whole cloves to a small saucepan over medium heat.
  2. Stir until brown sugar dissolves then bring to a boil.
  3. Reduce heat to low and simmer for about 10 minutes then turn off heat and allow syrup to cool before straining out solid ingredients. Makes about 24 servings.
Preparation
Feel free to mix the liquid ingredients of this cocktail up to two days ahead of time and store in the fridge or freezer. When you're ready to serve, give it a stir then pour over ice.
To large batch this drink, combine six ounces mezcal, three ounces orange liqueur, three ounces lime juice, and three ounces hibiscus syrup in a pitcher over ice. Serves four.
Modifications
You can make this a hibiscus lime margarita or use lemon or sour orange, depending on what you have available. Sour orange is used widely in the Mexican Yucatan region the way that we use limes in the United States.
Add a slice of jalapeño or habañero to make a spicy hibiscus margarita.
