Dissolve the matcha powder and chai simple syrup in boiling water with a bamboo whisk or frothing wand.
Heat six ounces milk to steaming (but not boiling) then carefully swirl frothing wand just below the surface of the milk to create latte style foam.
Pour prepared chai matcha mixture and steamed milk into a mug and serve warm.
To Make an Iced Matcha Chai Latte
Add matcha powder, chai syrup, and eight ounces milk to blender and pulse until uniform and foamy (about one minute).
Pour into a highball glass over ice and serve cold.

Making the Chai Syrup
In a small saucepan, dissolve 2 cups of brown sugar, 1 ½ tablespoon ground ginger, 3 teaspoon ground cinnamon, 2 teaspoon ground allspice, 1 ½ teaspoon ground clove, 1 ½ teaspoon ground cardamom, 1 ½ teaspoon ground black pepper, and 1 teaspoon ground nutmeg in 1 ¾ cup water over medium heat on stove top.
Bring the mixture to a boil then reduce heat to low and simmer for 10 minutes.
Remove from heat and cool fully before using in cocktails. Makes 24 servings.
PreparationA bamboo whisk, fork or frothing wand will all work to dissolve the matcha powder.To froth the steamed milk, you can also pulse it in your blender to make it foamy. Or, if you have a milk steamer appliance, you can simply pour your milk into it.You can make this latte up to three days ahead of time and store in the refrigerator. A little separation is normal so make sure you shake or stir it before drinking.
