Instructions

  • Prepare the Filling: Preheat oven to 375 degrees Fahrenheit. Remove the pits from the plums and slice them into ½-inch pieces.

  • In a mixing bowl, stir together the brown sugar, granulated sugar, flour, cardamom, cinnamon, and ginger, then toss the plums in this mixture. Stir in the lemon juice then set aside.

  • Make the Topping: In another mixing bowl, stir together the flour, brown sugar, baking powder, cinnamon, sea salt, vanilla extract, and egg. The mixture will look like a crumbly dough.

  • Assemble and Bake: Pour the plum filling mixture into a baking dish then sprinkle the topping mixture over it evenly.
  • Spoon the melted butter evenly over top and transfer to the oven to bake for about 30 minutes or until the topping is golden brown and the plums are tender and bubbly. Serve warm.

Notes

Preparation
Should I peel the plums? No. Leaving the skin on the plums helps them hold together better while baking, and adds a beautiful color to the filling.
Modifications
If you want more of a plum crisp-style topping, mix in a few spoonfuls of chopped almonds or pistachios and about ¼ cup of old-fashioned oats.
You can use half plums and half of another kind of fruit to add different flavors to the filling. I've found that cherry, peach, apricot, apple, and blueberry are complementary to plum.
Bake the ingredients in oven-safe ramekins for single-serve crumbles.
Use plant-based butter and egg substitutes to make this recipe vegan-friendly and dairy-free!
Storage
To store, cool the crumble to room temperature then transfer to an airtight container or cover with plastic wrap and refrigerate for up to five days. Reheat in the oven or an air fryer to help get the topping crispy again.
To freeze, cool the crumble to room temperature, then transfer it to an airtight, freezer-safe container or cover with a couple layers of plastic wrap and aluminum foil. Place in freezer for up to six months.
