Fill glass ¾ full with ice then squeeze in juice of blood orange.
Pour in apple cider vinegar and cinnamon syrup then top up with ginger beer and stir to combine.
Garnish with pomegranate arils and rosemary then serve cold.
Notes
To Make the Cinnamon Syrup
Add one cinnamon stick (or two teaspoons ground cinnamon), 1 ½ cup brown sugar, and one cup water to a small saucepan over medium heat and stir until dissolved.
Bring the mixture to a boil then remove it from heat and steep until cooled.
Strain out any solid pieces and transfer the cooled syrup to a container to store. Makes 18 servings.
PreparationYou can prep this drink in advance and refrigerate it. Just don't add the ginger beer to the mix until just before serving so that it doesn't go flat.To batch for a crowd, add the juice of two blood oranges, three ounces apple cider vinegar, two ounces cinnamon simple syrup, and 12 ounces ginger beer to a pitcher filled halfway with ice. Stir to combine then garnish with pomegranate and rosemary.
