Ingredients

  • 3 mint leaves
  • ½ ounce hibiscus syrup
  • ice
  • 2 ounces rum
  • ¾ ounce lime juice from about one lime
  • club soda

Instructions

  • Add mint leaves and hibiscus syrup to glass and press together with a muddler to express the mint oils and combine the flavors.
  • Fill glass halfway with ice then pour in rum, lime juice, and club soda. Stir gently until combined.
  • Garnish with mint bouquet, if desired, and serve immediately. Enjoy responsibly!

Notes

Preparation
Because of the bubbles in the club soda, I don't recommend prepping a hibiscus mojito in advance. It only takes about three minutes to put together so it's easy to enjoy on demand.
To make a fishbowl or pitcher hibiscus mojitos, add 12 mint leaves and two ounces of hibiscus syrup to pitcher then muddle together. Fill ⅓ full with ice then pour in six ounces rum, three ounces lime juice, and top up with club soda. Stir and serve cold. Makes four servings.
