Easy summer or fall side dish of baby potatoes oven-baked to be crispy on the outside and buttery on the inside with just a few ingredients and the fresh flavors of lemon, garlic, and chive

Ingredients

  • 1 ½ pounds baby potatoes cut in halves
  • 2 tablespoons melted butter
  • 1 tablespoon olive oil
  • juice of one lemon
  • 1 tablespoon chive roughly chopped
  • 1 clove garlic chopped or minced
  • sea salt to taste
  • black pepper to taste

Instructions

  • Preheat oven to 375 degrees. Add all ingredients except for chives to a bowl and mix until potatoes are coated.
  • Spread potatoes in one layer on a baking sheet and bake for about 40 minutes. Garnish with chive before serving.
