  • Steep hibiscus tea in warm water for about five minutes or until the water turns a deep purple color.
  • Meanwhile, mix together dried rose petals and sparkling sugar in a shallow dish. Run the orange around the rim of a highball glass then dip the glass in rose and sugar mixture to create decorative rim.
  • Remove hibiscus from steeped tea. Add honey and stir until dissolved. Be sure to mix in the honey before adding any cold ingredients, to ensure it dissolves. Cold temperature makes honey nearly impossible to mix.
  • Squeeze orange juice into tea, followed by rose water.
  • Add about ½ cup of ice to this mixture and stir vigorously until chilled (about five seconds).
  • Fill prepared highball glass halfway with fresh ice then strain the tea mixture into the glass.
  • Top up with sparkling water and garnish with twisted orange peel, if desired.

Preparation
To make this mocktail ahead of time, just reserve the ice and sparkling water until you're ready to serve and store in the fridge.
To make this drink for a crowd, brew a pitcher of hibiscus tea in advance to make an easy big batch. This tip is great for making multiple drinks and even saves time for crafting a single.
Variations
I love sweet Cara Cara orange or blood orange juice in this recipe but you can use whichever variety you can find. I recommend fresh orange for the best flavor and so that you can use the peel for garnish.
I make this non alcoholic hibiscus drink with honey but you can use maple syrup, agave or sugar to make it vegan. You could even use my spiced hibiscus simple syrup or citrus syrup or ginger turmeric honey syrup to add sweetness and extra flavor!
Tips on Tools
If you don't have a mixing glass, jigger, and bar spoon to make this hibiscus iced tea mock-tail, you can use a table spoon (with a gentle hand), multi-measuring cup, and a standard size shot glass as dupes for these tools!
