  • Make the Patties: Add ground chicken, flax meal, maple syrup, and spices to food processor, then cover and pulse until combined (about one minute).
    Alternatively, you can mix these ingredients together by hand in a mixing bowl.
    1 pound ground chicken, 6 tablespoons flax meal, 2 teaspoons maple syrup, 1 teaspoon ground cinnamon, 1 teaspoon smoked paprika, ½ teaspoon rubbed sage, ½ teaspoon sea salt, ½ teaspoon black pepper
  • Divide the meat mixture into six equal pieces, then roll the pieces into balls and flatten each one into the shape of a hockey puck, about ¾-inch thick. I like to do this on a sheet of parchment paper to prevent sticking.
  • Cook the Sausages: Heat oil in a skillet over medium-high heat for about two minutes or until shimmering then add the patties to the pan.

  • Cook for about five minutes or until the bottom edges of the patties start to turn opaque, then flip and cook for five minutes more or until the internal temperature of each patty reaches 165 degrees Fahrenheit. Avoid overcooking so they don't dry out.

Modifications
I use a combination of warming, smoky, and bright herbs and spices like cinnamon, smoked paprika, and rubbed sage, but feel free to change up the seasonings to create the taste you like best.
You can divide the meat mixture into 12 pieces (instead of six) to make mini patties. Or you can shape it into logs to create sausage links instead.
Storage
Store in an airtight container in the refrigerator. They will last in the fridge for up to five days. Reheat in the microwave, oven, or air fryer.
To freeze, cool the patties to room temperature, then place in an airtight, freezer-safe container with pieces of parchment paper or wax paper between each patty (so they won't stick together). Once frozen, they will last in the freezer for up to three months.
