  • Remove peel from ginger and cut into smaller pieces to expose more of the surface area.
  • Add brown sugar, pineapple juice, pineapple chunks, and pieces of ginger to a small saucepan over medium heat. Stir until brown sugar is dissolved.
  • Bring mixture to a boil then reduce heat to low and simmer for about 20 minutes or until thickened slightly.
  • Remove from heat and let syrup cool to room temperature. Store in an airtight container in the fridge.

How to store simple syrup? Store any extra syrup in an airtight container and refrigerate. The syrup will keep for up to one month this way. I like these glass bottles because they're the perfect size for the recipe and look official so you'll feel like a real bartender at home.
Can I freeze simple syrup? Yes. Instead of a bottle, transfer the syrup into an ice cube tray and freeze until solid (about three hours). You can then store the cubes in an airtight freezer safe bag or container. Frozen syrup keeps for up to three months.
