  • 2 ounces gin
  • 1 ounce brown sugar pineapple syrup
  • ¼ lime
  • ice
  • tonic water
  • slice of pineapple optional garnish
  • lime wheel optional garnish


  1. Fill a highball glass ½ to ¾ full with ice. Add gin and brown sugar simple syrup to glass then squeeze in lime juice.

  2. Top up with tonic water and stir gently to combine.

  3. Garnish with lime wheel and slice of pineapple, if desired. Enjoy responsibly!
