Dark Chocolate Cherry Sheet Pan Pancakes

  • 3 cups Kodiak Cakes Dark Chocolate Flapjack Mix
  • ½ cup walnuts chopped
  • ½ cup dried cherries chopped
  • 2 ½ cups milk I used almond milk
  • 3 eggs
  • 1 teaspoon almond extract
  • 1 scoop Naked Nutrition Pea Protein Powder optional


  1. Preheat oven to 425 degrees. Combine Kodiak Cakes mix, walnuts, and dried cherries in a large bowl and stir to coat cherries and walnuts in the dry mix. (This step will prevent the cherries and walnuts for just sinking to the bottom of the pan while baking.)

  2. Add milk, eggs, and almond extract to dry mixture and stir very well. It's important to mix in multiple directions and scrape the bowl to ensure the batter is uniform and there are no dry pockets hiding.

  3. Spray a half baking sheet pan with non-stick spray then line with parchment paper (optional).

  4. Bake for 10-12 minutes or until springy to the touch. If unsure, insert a toothpick into the center. It should come out clean. Cut into squares while warm. Allow to cool for about 15 minutes before removing from sheet pan.
