  • 1 tablespoon olive oil
  • 1 pound hot turkey breakfast sausage
  • onion chopped
  • sea salt to taste
  • black pepper to taste
  • 10 ounces hot canned diced tomatoes & chiles like Rotel (drained)
  • 8 ounces cream cheese softened to room temperature
  • 1 cup sharp cheddar cheese shredded
  • 1 stalk chive or green onion chopped


  1. Preheat oven to 400 degrees. Heat olive oil in a skillet over medium flame. Add turkey sausage, sea salt, black pepper, and chopped onion. Cook until sausage is browned and onions are translucent. Drain.

  2. Stir in diced tomatoes and chiles then cream cheese. Mix until uniform.

  3. Spread mixture into a quart-sized baking dish then sprinkle cheddar cheese over top. Bake for 25 minutes or until cheese is golden brown and bubbly.

  4. Garnish with chive or green onion. Serve with sturdy crackers, chips, or veggie sticks for dipping.
