Apple Cinnamon Grain-Free Granola

  • 2 cups pecan halves
  • 1 ½ cup cashews
  • 1 cup sliced almonds
  • 1 cup pepitas (pumpkin seeds)
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • teaspoon sea salt
  • cup maple syrup plus one tablespoon
  • 3 tablespoons olive oil
  • 1 teaspoon vanilla extract
  • 1 ½ cups apple chips


  1. Preheat oven to 340 degrees. Add pecans, cashews, almonds, pepitas, cinnamon, nutmeg, and sea salt to a large bowl and mix together well.

  2. In a smaller bowl or large measuring cup, whisk together maple syrup, olive oil, and vanilla extract until uniform. Pour over dry mixture and stir until well coated.

  3. Spread mixture out onto a baking sheet and bake for about 15-18 minutes (mixture will no longer be glossy). While the granola bakes, crush apple chips into smaller, bite-sized pieces. 

  4. Remove pan from oven and let cool for a few minutes (mixture will become crisp as it cools) before mixing in apple chips.

  5. Store granola in a ziploc bag or an airtight, sealed container.

Recipe Notes

Keeps for up to six months in an airtight container.

Store in a cool, dry place (like your pantry). Do not store in the fridge in order to avoid moisture.
