Easy Pasta Skillet Dinner

Ingredients

  • 3 tablespoons olive oil
  • 3 cloves garlic chopped
  • 2 cups broccoli florets
  • 1 ½ cup matchstick carrots
  • 2 portabello mushrooms cut into 1-inch pieces
  • 16 ounces DaVinci bowties
  • 28 ounces crushed tomatoes or marinara sauce
  • 14 ounces water
  • 1 ½ teaspoons crushed red pepper
  • black pepper to taste
  • sea salt to taste
  • 2 handfuls baby spinach leaves
  • parmesan cheese to taste

Instructions

  • Add olive oil in a large saucepan over medium high heat. Add garlic and sauté until fragrant (about two minutes). 
  • Add broccoli and carrots then sauté until tender (about three minutes), stirring regularly. Add in mushrooms and sauté for about two minutes, stirring regularly.
  • Add pasta to pan then cover with crushed tomatoes (or marinara sauce) and water. Stir in sea salt, black pepper, and crushed red pepper then loosely cover pan. 
  • Cook until sauce is bubbly then reduce heat to medium and simmer for about 15 minutes or until pasta is tender.
  • Remove pan from heat then stir in spinach until wilted. Serve with a sprinkle of parmesan cheese.

Notes

Crushed tomatoes will give you more of a fresh tomato flavor in this dish so, if you don't want that, I recommend going with marinara sauce instead.
