  • 4 boneless, skinless chicken breast
  • 1 chipotle pepper sliced
  • ½ onion sliced
  • ¼ cup fresh cilantro chopped
  • 3 cloves garlic
  • 2 cups chicken broth
  • red chili pepper to taste
  • black pepper to taste
  • sea salt to taste


  • Add all ingredients to slow cooker and cook on low for 4-6 hours or high for 2-4 hours. Cook times seem to vary depending on manufacturer.
  • Using two forks, pull and chicken breasts to shred. The meat should shred easily.
