Sweet Potato Chorizo Noodle Soup

Ingredients

  • 2 tablespoons olive oil
  • 9 ounces spicy chorizo sausage
  • onion chopped
  • 4 cloves garlic minced
  • 1 sweet potato peeled and cut into ½-inch cubes
  • 6 ounces Skinner Extra Wide Egg Noodles
  • 4 cups chicken stock
  • 2 handfuls fresh baby spinach
  • fresh parsley optional garnish
  • sea salt to taste
  • black pepper to taste

Instructions

  • Add one tablespoon of olive oil to a medium-sized pot or Dutch oven then add chorizo over medium-high heat. Cook for about ten minutes. Meanwhile, cut up your veggies.
  • Add remaining olive oil, sweet potato, onion, and garlic to pot and stir to incorporate. Continue to cook for about five minutes then add in chicken broth and noodles.
  • Bring to a boil then reduce heat to medium, cover, and simmer for about five minutes or until noodles and sweet potato are tender.
  • Remove from heat and stir in spinach until wilted. Serve hot and consume carefully.
