  • 1.5 ounce pomegranate juice
  • ¾ ounce simple syrup optional
  • 6 ounces champagne chilled
  • pomegranate arils for garnish

Instructions

  • Rim a champagne glass with citrus fruit then dip into a small dish of sparkling sugar to create a decorative rim.
  • Pour pomegranate juice into prepared champagne flute.
  • Top up glass with champagne and sprinkle in pomegranate arils to garnish.
  • Add in simple syrup to taste, if desired. Stir gently and serve immediately.

Preparation
To make pomegranate and champagne cocktails for a crowd, pour the bottle of sparkling wine into a pitcher or beverage dispenser with ¾ cup pomegranate juice, ½ cup pomegranate seeds, and simple syrup to taste. Serves up to four.
When making the sugared rim, avoid squeezing the citrus so that the juice doesn't drip and run down the sides of the glass.
Modifications
Make this drink stronger and more merry with half a shot of hard liquor. It's easy to make a very merry drink pomegranate champagne cocktail with vodka, brandy, or whiskey!
Want to make this drink non alcoholic? Use sparkling water, kombucha, or a dry sparkling cider instead of champagne.
Trouble Shooting
Granulated sugar is too fine in texture for a good cocktail rim. I recommend sanding sugar or sugar sprinkles because the crystals are larger, which means they stand out more visually and won't dissolve in whatever liquid you use to make the rim.
