Baked Breakfast Potatoes

  • 5 pounds red-skinned potatoes cut into cubes
  • 1/2 yellow onion chopped
  • 3 tablespoons butter melted
  • 1 tablespoon olive oil
  • 1 tablespoon dried parsley
  • 2 cloves garlic minced
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • sea salt to taste
  • chopped green onion optional garnish


  1. Preheat oven to 400 degrees. Add all ingredients to a large baking sheet and mix until potatoes are coated with butter and spices.
  2. Spread in a single layer on pan. This is key to getting the potatoes nice and crispy.
  3. Bake for about 45 minutes, checking and turning, if necessary, throughout.
  4. Garnish with green onion, if desired.
