Mix sea salt and flour in a bowl, work in butter with hands until a coarse meal is formed, then add water and continue to mix with hands until a ball of dough is formed. Wrap in plastic and stick in freezer while you make the filling and topping. Preheat oven to 350 degrees.
Mix apples and pears with sugars, spices, and sea salt in a large bowl. Add flour, cranberries, and walnuts. Mix well and set aside.
In a smaller bowl, mix topping ingredients together until thick and fully incorporated. Set aside.
Roll out crust then place into an 8-inch pie pan.
Add filling then drizzle with maple syrup.
Spoon topping onto pie and spread, if necessary, to evenly cover filling.
Bake for one hour. Bottom crust should be firm and golden and filling should be thickened and bubbly. The topping should be golden brown and firm to the touch.
