I first served these slow cooker pulled BBQ chicken sliders at my Christmas Party last month and the feedback was awesome so I thought I’d share the recipe here. Lots of folks assumed the meat was pulled pork due to the flavor and juiciness! It’s actually chicken–and white meat at that. Despite the bad reputation chicken breast has for dryness, this yummy tenderness is unbelievably easy to attain and the result is well worth the small amount of effort required. You basically throw the ingredients into your slow cooker and let the magic happen. I started the chicken a few hours before the party and handled a bunch of other pre-party tasks while it cooked away–no supervision required. 🙂
Whether you’re tailgating or just looking for something delicious for dinner, these slow cooker pulled BBQ chicken sliders fit the bill. The flavor comes from barbecue sauce, sea salt, black pepper, and a bit of chili powder. I used Sweet Baby Ray’s original but you can use whatever sauce is your favorite. The Jank is a great spicy option if you want a some heat–I used it to make these BBQ chicken & veggie bites. But back to this recipe–The chicken is so tender and succulent that no sauces are needed for garnish but I did serve these with pickle and onion slices. King’s Hawaiian rolls are the perfect little buns for these. A trick when cutting the buns for sliders: Remove buns from package without separating them. Slice through the entire group of buns horizontally then separate all at once. This little hack takes just two minutes! I use the same method when making these Hawaiian turkey burger sliders, too.
