Champagne or sparkling wine of your choice. If you don't have champagne available, Cava and Prosecco are suitable substitutions.

Substitutions & Variations
Sweetener - Pomegranate juice is tart and very lightly sweet. If you are unfamiliar with its flavor or prefer your cocktails on the sweeter side, I recommend adding a splash of simple syrup. You can also use other sweeteners like honey ginger syrup, maple syrup or agave nectar.
Garnish - Sipping this drink through a sugar rim adds enough sweetness and sparkle for me but it's optional. You can also add fresh sprigs or rosemary or orange slices for extra razzle dazzle.

How to Make a Pomegranate Champagne Cocktail
Making a Sugar Rim on a Champagne Flute
Step One: Run a wedge of citrus fruit around the edge of the champagne flute and the juice will stick to it.
Step Two: Dip the flute, edge side down, into a container of sugar and twist until the juice picks up a nice collar of crystals.
Pro Tip #1: Avoid squeezing the citrus so that the juice doesn't drip and run down the sides of the glass.
Pro Tip #2: Pour just a shallow layer of sanding sugar or sugar sprinkles into a small bowl to dip the glass into. A plate will also work.
Step Three: Once you have a satisfactory rim, you're ready to mix your drink!
Pro Tip #3: Granulated sugar is often too fine in texture to stand up to the citrus juice. Just like with diamonds, bigger sugar crystals stand out better against the glass and will look more sparkly for an aesthetic champagne drink.
