Kind-of Dark and Stormy Cocktail

Do y’all buy souvenirs when you travel? This is always a must-do on my itinerary whenever I roam–usually on the last day of the trip. My go-to items include shot glasses and t-shirts but on my trip to Belize, I also loaded up on local wine, liquor, and other edible goodies for myself and friends. It was all very well-received. 🙂 A group of my friends recently traveled to Costa Rica and one of them brought me back a bottle of dark rum so, of course, I had to make a cocktail with it–meet the Kind-of Dark and Stormy.

This is a good follow-up to the pineapple upside-down rum cake I shared last month. To make this drink, I referred to the original Dark and Stormy recipe, played with the proportions, and added a splash of sweet pineapple juice. I also used key lime juice rather than that of a regular lime for a simple twist. The result is bright, tropical, and instantly transports me to a dreamy destination in my mind. My last tropical trip was a couple of years ago but I have one on the horizon early next year so I suppose I’ll be sipping on these until then. Side note: I tested this cocktail a few times until I got it just right and when I got to photographing the final rendition, was out of ice! It just as well because I have slightly sensitive teeth ever since my braces came off so I don’t typically take much or any ice in my drinks BUT if you want to make your with ice, feel free. 🙂 I simply chilled my glass, the pineapple juice, and the ginger beer. If you like the kind-of dark and stormy, you might also like my cranberry apple spice mules.   1. Add all ingredients to chilled glass and stir. Garnish with lime slices.

  1. This sounds like a really simple little cocktail! Pineapple is such a nice summery taste, too. I’m not big into fruity drinks, but maybe the hubs would like to try this one! Thank you for sharing the recipe!
