The name of this appetizer is exactly what I thought of the first time I made it. I had a more dignified description in mind but the base of this dip–a hot, melty wheel of brie cheese, cascaded all over the serving platter, shattering my vision of a perfectly neat little dish. It’s kind of gorgeous in it’s own way and still absolutely delicious, though, so pardon the mess and dig in! The “harvest” part of the name comes from the ingredients sprinkled over top of the brie: apple, pumpkin seeds, cranberries, and more. These are great autumnal additions and a [generous] drizzle of raw honey helps meld everything together as well as balance out the saltiness of the cheese. You’ll have all your flavor and texture bases covered, too. Sweet? Salty? Tart? Woodsy? Crunchy? Creamy? Put checks next to all of those!
Visually, this dip just looks so indulgent. The best part is it takes under 20 minutes and just a couple of steps to assemble so it’s the ideal nosh to throw together for girlfriends coming over after work or a last-minute kickback or potluck contribution. This also works well for a casual date night-in. Just add a bottle of wine, turn on some Sade, and you have an instant setting for good vibes. If you are hosting [or contributing a dish to] a party soon, make this as an alternative or in addition to the easy cheese board or praline brie dip I shared last year. In fact, this dip is almost an all in one cheese board when you think about it! I learned a lot about building a cheese board and French cheeses in general at a fun event last Fall. I’ve found you can seriously make a watch party out of just about any show, documentary, or even the recent presidential debates. [Insert face-palm here.]
Back to the hot mess harvest dip: You don’t need many ingredients and they’re all listed below.
