Fruit salad is kind of an afterthought in most spreads. At least, it often seems like one. The same old combinations thrown into a bowl and it's no wonder that there are always copious leftovers. I like to always serve fresh fruit and or veggies whenever I host or contribute to a spread and this Mother's Day was no exception. I hosted a brunch to celebrate some of my favorite mamas (more on that Thursday) and was able to tick a recipe off my to-do list at the same time. I keep a list of recipes I want to make or remake in my phone and sometimes have a hard time keeping up with it!
This fruit salad recipe has been on my mind to make since December and I finally got to test it out the other day. It was a success so I thought I'd share it with y'all. This fruit salad with sweet orange mint dressing calls for just a few ingredients and you can even mix and match the fruits as you see fit. I chose honeydew melon because my mommy loves it and it's the only melon I really eat but you could probably try cantaloupe or watermelon as well.
A food blogger that I follow, Sharon, uses pineapple and watermelon in a similar fruit salad on her blog, Certified Pastry Aficionado, and it's definitely worth checking out. One thing I don't recommend you mess with, though, is the type of orange. Cuties, clementines, or whatever other name they may go by in the grocery stores, are popular among little ones because they're easy to peel and naturally very sweet. I like to snack on them at work for the same reasons and the flavor goes very well in the dressing here, which is just fresh orange juice, honey, and muddled mint leaves.
Don't worry if you end up with a little more liquid than what you add to this salad because melons just happen to be very watery fruits. This is a quick little dish you can whip up for snacks, as part of meal prep, or for any kind of entertaining spread or cookout. I recommend serving it nice and cold. It's just better that way + the heat is already turning up down here in Houston, so it'd be just wrong to do otherwise. We really enjoyed this dish on Sunday and I hope you'll get a chance to try it out soon.

Fruit Salad with Sweet Orange Mint Dressing
Ingredients
- 1 honeydew melon cut into cubes
- 2 pounds strawberries hulled and halved
- 2 pounds red grapes halved (if desired)
- juice of 2 "Cuties" oranges
- 2 tablespoons honey
- 3 sprigs fresh mint leaves chopped
Instructions
- Add all fruit to a large bowl.
- In a small bowl, mix together honey, orange juice, and mint leaves, muddling the leaves slightly.
- Pour mixture over fruit and toss well. If using cold ingredients, serve immediately or chill for an hour or so to allow dressing to "marinate" fruit.

I haven't made this particular one with green grapes but I think the tartness would go will with all the sweet elements of it. I just wanted to have good color variety here so I chose red.
