This. Is. Dinner, y'all. Meatloaf, potatoes, and green beans is the ultimate in American comfort meals (just ask Google) and something I enjoyed growing up. Of course, I had to put my own spin on this and ensure it could be made expeditiously--under 45 minutes, to be exact. Also, this is a sheet pan dinner so everything is cooked up on one pan so you get a classic, home-cooked meal in a snap without a sink full of dishes haunting you afterward. This easy sheet pan turkey meatloaf dinner is the best way to get a hearty (and healthy!) weeknight meal on the table for your family or (if you're me) meal-prep lunches for the whole week.
As you may know from prior recipes shared here, I don't eat a whole lot of red meat and using ground turkey in place of ground beef is one of my favorite pastimes. 🙂 This meal is no exception but, of course, you can modify it to incorporate the ground meat of your choosing. Don't get it twisted, though--the meatloaf is moist and flavorful! Plus, the potatoes are crisp on the outside and buttery on the inside, and the green beans are...not an afterthought! A lot of times, it seems like the greenery in this kind of meal is a flavorless add-on and I'm just not with that. A little squeeze of lemon juice is all it takes to make sure no side dish gets left behind.
Perhaps best of all is that everything cooks for the same amount of time at the same temperature and comes out perfect. From start to finish this entire meal takes about 45 minutes, including prep work. The magical pan that holds everything together is available here on Amazon!
I hope your week has been wonderful so far and that you'll slide this easy meal into your rotation ASAP--you won't regret it. Thanks for reading!

This looks soooo good! I'm not a fan of red meat either, and I'd rather opt for turkey or chicken so this recipe is pretty awesome for me! I'm giving it a try this week for sure! (This made me really hungry?) Thanks for sharing 🙂
