Five ingredients, five minutes, and the salad dressing of your choice. That is all that's standing between you and this fresh, simple, crunchy kale salad. We all know we should get lots of greens in our diets but it's easy to get stuck in a rut and pass up your veggies in favor of other things so I'm sharing a new salad I added to my rotation. I have yet to make a salad of my own that I want to eat every single day and I'm always mixing it up so I don't get bored. This is not to say that I eat salads every day because I definitely don't!
When making this salad, I played with all the typical elements I outlined about building the perfect salad in this post. There's a delicious and easy homemade dressing recipe there as well, which would go really well with this salad. I went with tried and true components like Granny Smith apple for a little sweetness and walnuts for crunch then added a new ingredient I found in my January Degustabox.
These parmesan whisps from Cello are just made for topping salads...or maybe also eating alone like chips? #nojudgement They add another level of satisfying crunch, a little saltiness, and, of course, cheesy flavor. They're made from only parmesan cheese and nothing else so I had no problem piling them on to this salad, which has actually been part of my meal prep for this week. I'm no vegetarian so I paired it with roasted chicken and bam: lunch!
This is a short week for me as Monday was MLK Day and I'm formally moving into my new house (eek!) tomorrow and will be working from home for a bit. I'll be munching on this salad between unpacking, accepting deliveries, conference calls, and prepping for my linesisters to come help unpack and celebrate my first night in the house. Crunchy Kale Salad
Ingredients
- 1 bunch kale chopped
- 1 Granny Smith apple cut into small chunks
- 6 ounces walnut halves or pieces
- 1 cucumber cut into small pieces
- 1 package Cello parmesan whisps
- salad dressing of your choice
Instructions
- Assemble all ingredients except parmesan whisps in a large bowl then toss, ensuring the leaves get coated with salad dressing. Top with whisps. Serve.

This is a great way to do a Kale salad! I think people often think you just have to throw it into stuff, blend it away and never look back, but I love when Kale gets to be the star of a dish :). I can't wait to try this!
