What is there really to say about steak? There are so many cuts and ways to dress it up but, when prepared well, it doesn’t need much. I think most of us can agree, however, that a little bacon never hurts things. For this dish I used a sirloin and mesquite smoked bacon. An optional addition is grilled shrimp. Flavorful herbed butted is mandatory, though. And it. is. wonderful. This steak is sure to impress your Valentine or whoever you choose to share it with, plus it doesn’t take a lot of time or effort. It goes well with a glass of red wine, my garlic mashed potatoes, and zesty gray squash.


1.5 pounds sirloin

2 tablespoons butter

1/2 teaspoon garlic, minced or chopped

1/2 teaspoon basil

Dash of minced rosemary

4 strips bacon

4 peeled and deveined shrimp (optional)

Dash of Worcestershire sauce

Sea salt and black pepper to taste

Olive oil

Makes four servings.


Before starting on the steak, prepare your herbed butter by melting the two tablespoons of butter in a small bowl. Add garlic, rosemary, and basil to the butter and stir well. Pop the bowl into the fridge to harden.


Next, cut steak into four pieces. This is easiest to do along the marbling (fat lines) with kitchen shears. Wrap each piece in a bacon slice. Stretch the bacon around the steak and secure it by placing the more fatty end of the slice over the less fatty end. This will help the bacon stick together and stay snug around the steak.


Season lightly with black pepper and salt. If you plan to garnish your steak with shrimp, season it at this time as well. Heat olive oil in a skillet or grilling pan over medium-high heat. Add steaks to pan and cook for six minutes. Add a dash of Worcestershire sauce to each medallion. Turn and cook for an additional four minutes.


If you prefer your steak medium, this is where you stop. If you prefer your steak medium to well done, transfer the steaks to a foil-lined pan and place in an oven heated to 400 degrees for about 17 minutes. To the same skillet or pan used for the steak, add a little more olive oil and cook shrimp.


Top each medallion with a bit of the herbed butter (which should be hardened now) and watch the magic that is butter melting over steak and bacon!

Then, place one shrimp atop each medallion and serve.
