Spiced Peanut Butter Cookies

My mom is the best mom ever. No, seriously, she is. Most everybody thinks that about their mom and you probably rolled your eyes when you read that so let me give you a little context on what makes her the best in my eyes. She [with my dad] raised five of us and never played favorites…even though we know I’m the obvious frontrunner in that area. ๐Ÿ™‚ She was diagnosed with Lupus when I was two or three years old and has endured periodic flares, weight loss, hair loss, heart disease, a stroke,ย numerousย surgeries and procedures, dialysis for the last fourteen years, and countless other physical and mental difficulties. Throughout all of this, she has remained our mommy and poured into us as much as and probably even more than a “regular” mom. She has remained strong in her faith and supported all of us through travel, degrees, and in pursuit of our dreams. She is my biggest cheerleader! So, of course, I am always trying to lighten her load and do little things for her where I can. That’s where these cookies come in. Peanut butter cookies are her favorite. When I opened my June Degustabox and spotted the Jif cinnamon peanut butter, I already knew what to make with it.The flavor of this peanut butter isn’t as peanut-y as other kinds and the cinnamon is also mild so I thought I’d add some other spices to strengthen it. While this ingredient was the inspiration for the cookies, feel free to add more cinnamon or use a different butter if you like.

1/2 cup cinnamon peanut butter ( 1/2 cup peanut butter and 1 teaspoon cinnamon)

1/2 teaspoon ground ginger

1/2 teaspoon nutmeg

1/4 teaspoon ground clove

1 cup unsalted butter, softened

1 1/4 cups flour

1 teaspoon baking powder

1 cup packed brown sugar

1 egg

About 1/2 teaspoon of sea salt

Makes about twenty cookies.

Mix together butter, peanut butter, egg, and brown sugar.

In another bowl, whisk together remaining ingredients.

Fold wet into dry to form dough. Cover and chill for at least an hour.

Preheat oven to 375 degrees. Roll dough into half-dollar-sized balls and place on a cookie sheet lined with parchment or wax paper.

Press down on balls with a fork to make a criss-cross pattern. Bake for about ten minutes.

    It’s hard to pick a favorite cookie! I definitely like peanut butter cookies and good ol’ chocolate chip cookies, but I also like a triple ginger cookie that I usually make at Christmas

    This recipe looks delicious. I can’t wait to try making these since I love cinnamon. I think for me I will always hold oatmeal cookies as my favorite cookie (hold the raisins) because it feels like a warm hug in a cookie. Degustabox sounds packed with actually useful items!
