2015 has brought very chilly temperatures to my city. I don't know about you, but cold weather makes getting out of bed in the morning nearly torturous for me. Heading in to the office to do fulfilling work and draw a paycheck doesn't light the fire that it should on some mornings. This breakfast helps with that. When it is cold outside, a warm breakfast is so important. I began making this hash, which is a tweaked version of a recipe from my good friend Samantha, last fall and have continued to do so almost every week because it is so good! It is filling, has fiber, crunch, flavor, a touch of sweetness, and just looks yummy on a plate. The ingredients are few and the preparation is simple. I make a batch of this on Sunday evenings (usually while watching some sort of reality TV) and heat up my desired portion each morning. When I walk through the office with a warm plate of this, the aroma always elicits mmmms and ooooohs from those around. Hopefully, this breakfast hash will warm up your winter mornings as well.
Ingredients
3 medium sweet potatoes, peeled
1 large apple (I usually use golden delicious or honey crisp)
6 sausage patties of your choice (I use Applegate Naturals or Jennie-O turkey patties)
¾ cup of raisins
¼ cup of walnut pieces
½ teaspoon of cayenne pepper or chili powder
1 ½ teaspoons cinnamon
1 rounded teaspoon sugar
Sprinkle of nutmeg
Olive oil
Makes five generous servings.
Preheat oven to 400 degrees. Slice sweet potatoes into one-inch medallions then chop into cubes. In a bowl, sprinkle sweet potato cubes with cayenne pepper (for kick) or chili powder (for a more smoky flavor) and half a teaspoon of the cinnamon. Drizzle with olive oil and toss until well coated. Core and chop apple into cubes then, in another bowl, mix with sugar, nutmeg, and remaining cinnamon until well coated. Cut sausage patties into squares.
Combine sweet potatoes, apple, sausage, raisins, and walnuts in a non-stick 13 x 9 inch baking pan and mix lightly. Broil in oven for 40 minutes, or until sweet potatoes and apple are tender, checking and stirring every 10 minutes.

Now this is a very interesting combination of flavors. I love my sweet potatoes to be SWEET (with cinnamon, sugar, and honey). I've tried to make savory sweet potatoes and did not like the way they tasted, so I was interested in how chili or cayenne pepper would make the potatoes taste. WELL this is the perfect mixture of savory AND sweet. Loved the sweet turkey sausage and how the apples added an extra "zing." This recipe is extremely clutch for those of us who like to eat breakfast but don't have time to cook a breakfast meal everyday. I would recommend this to anyone.
